Deutsches Zusatzstoffmuseum

Deutsches Zusatzstoffmuseum in Hamburg occupies a tucked-away site on the wholesale market grounds, between the Oberhafen and Amsinckstraße in Hammerbrook. Wheelchair access makes the setting easier to navigate. Inside, everyday products lead you through flavour enhancers, aromas, colourants, enzymes, emulsifiers, stabilisers, preservatives, and baking agents. Powders and liquids resemble ordinary ingredients many people consume daily.

Displays explain how these substances function, how producers make them, and which potential risks or side effects they may carry. European Union practice receives attention, including additives that may appear without mandatory labelling. The focus also covers hidden uses, places where additives appear, and options for avoiding them. Special tours add small experiments for groups and school classes.

Food chemists Georg Schwedt and Udo Pollmer led the scientific development with support from the Hamburger Lebensmittelstiftung. A memorable detail is the contrast between mundane powders and the questions they raise about food production.
